The Adelaide Hills produces some of Australia’s finest Chardonnay. Since it’s first release (vintage 2000) M3 Chardonnay has quickly established a reputation amongst Australia’s finest.
09年份的M3夏多內，葡萄經由冷壓榨後直接入桶進行發酵( 採用20% 新法國橡木桶)，然後50%的酒汁再次進行乳酸發酵。現在品飲仍顯年輕，釋放宜人的檸檬、燕麥、桃子、新鮮杏桃與ㄧ絲西洋杉的氣息。 中等酒體，飽滿的口感中帶有絕佳的酸度，具有滑順的質地與綿長的尾蘊，是一款具有較藏潛力的夏多內白酒，2015年前皆為試飲期。
The fruit for the 2009 M3 Chardonnay was pre-chilled and pressed cold straight to barrel (French barriques, 20% new) with no settling. It underwent 90% natural ferment and 50% malo-lactic. It seems youthfully mute at the moment with subtle notes of lemon curd, oatmeal, peach blossom, fresh apricot and honey-nut plus a whiff of cedar. Medium-bodied, the palate has a great deal of tension with crisp acid, a satiny texture and a long finish. Give it another 6-12 months in bottle and drink it through 2015.
